Granola Bars

I love granola bars.  They are a perfect on the go (or sitting around the house) snack. There a tons of granola recipes. but this is our favorite.  On this particular day I used chopped walnut and craisins.
2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup wheat germ
1 teaspoon ground cinnamon
1 cup whole wheat flour
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 teaspoon vanilla
1/2 cup chopped nuts, optional
1/2 cup dried fruit, optional
1/2 cup chocolate chip, optional

Preheat oven to 350 degrees.  Grease a 9x13 inch pan.
In a large bowl mix oats, brown sugar, wheat germ, cinnamon, flour, salt, nuts, dried fruit and chocolate chips.    Make well in the center of the mixture and pour in honey, egg, oil and vanilla.  Mix well.  At this point it's best to use your hands.
Press the mixture into the pan.  Bake for 20-30 minutes until the edges brown.
Let it cool for five minutes, but make sure to cut into bars while it's still warm.  Store in a airtight container.
They are super taste! Olivia can't wait to get her hands on them.

{sleep} training

Last week while Jesse was out of town the girls went on a sleep strike.  Olivia refused to go to bed and Emily would be up all night.  I think I was get about 3-4 hours of sleep each night.  Even our cat went on sleep strike.  Then this happened and we had a whole new ball game.
Once she discovered that she could climb out of her crib there was no stopping her.  The day Jesse got home Liv fell while climbing out of her crib so the next morning she was the proud new owner of a toddler bed.

Now we're trying to teach Olivia how to sleep in a toddler bed.  It's not been an easy week.  She wakes up in the middle of the night, wanders around her room and doesn't go back to sleep...til nap time.  ugh.  This is what happens at nap time.  She pulls out all her toys and eventually falls asleep on the floor.
The night before Olivia moved to her toddler bed, I decided it was a good idea {sleep deprived} to start sleep training Emily to sleep unswaddled.  One night she'll sleep from 7 pm-6 am the next night she's up every 1-2 hours.  Thankfully she only need to be shushed and patted back to sleep.  But doing that 7-8 times a night becomes exhausting {there are 52 steps from my bed to her crib}. Since she's becoming more active she's moving around her crib in the middle of the night and waking herself up. Most mornings I find her sideways in her crib.
So here we are this morning at 4:30 am, both girls bright eyed and ready to start the day.  Me, not so much.  I think I got two hours of sleep last night.
I'm on my second pot of coffee, eagerly waiting for Olivia to close her eyes so I we can take a nap.  I hate days like this.  I'm so tired I can't think straight so the tv is on more than it should be and all we do is read.  I don't have the energy to do anything else {I call these bad mom days}. But, before we know it they'll be teenagers refusing to get out of bed...right?  Or at least that's what Jesse and I keep telling ourselves.

I used to think "chasing a toddler" was an expression.  Lately it's a way of life.

Our {love} day

Hubs is out of town this week so we celebrated Valentine's day on Saturday.  I made a heart shaped pizza {you have to squint to see it}.
After dinner we exchanged our valentines.  Earlier this week Olivia and I decorated a mailboxes for our valentines.
Olivia got Dora chocolate and pjs.  She tore into that chocolate like it was her job.  I think she ate three pieces before we realized what she was doing.
These are some of the valentines we made.
I also made Jesse some office snack jars.  For a complete tutorial go here. I got a lovely necklace and earrings.
As for Valentine's Day, we had heart pancakes for breakfast and painted some toes pink.
Since it was warm (55 degrees) we had lunch on our sun porch.  It was too windy to play outside though.  Plus we still have patches of ice in our yard.
Emily loved watching Olivia run around and go down the slide.
And of course Valentine's day isn't complete without some sisterly love.
We hope you had great Valentine's day too.
