Corn & Tomato {salad}

It's corn season here in PA.  Last week we shucked, blanched and froze ten dozen ears of corn for the winter. Jesse's grandmother came over to watch the girls while I worked on the corn.  Instead they both napped at the same time {never happens} so she was able to help me. Yay! We froze corn on the cob and kernels. There's nothing better than fresh corn in the dead of winter.
Since we had lots of fresh corn on hand and our garden is over flowing with tomatoes I thought I'd share a simple summer salad; corn and tomato salad. It's easy to make and very yummy.

Corn & Tomato Salad

{SALAD}
2 cups of corn {four ears of corn, if you're going fresh}
2 cups of tomatoes, diced
1 avocado, diced
1/2 red onion, diced

{DRESSING}
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon lime juice
1/4 cup cilantro
salt and pepper to taste

Combine corn, tomato, avocado and onion in a larger bowl. Mix together the dressing in a separate bowl and pour over the salad. Mix together, serve and enjoy.

This looks awesome! The photo of Jesse's grandmother in the kitchen brings back such sweet memories of my grandma cooking. Thanks for sharing :)
